Yes, as mentioned above with the proper technique, stainless can be painted. At last count, there were 98 painted DeLoreans out of a database of 8830. Some of those cars were painted as a result of body damage sometime in the car's life. More often than not, the cars that were painted get returned to stainless when they are restored.
Yes a wrap will stick to stainless. It will not adhere to a polished stainless steel as well as the rougher stainless steel.

. Unless you live near the ocean or drive the salty roads of the north, I don't see the point of the extra expense of stainless steel if you are going to just paint it anyway. First time I've seen a painted Delorean...takes away most of the cool factor for me.

I'll definitely get bare stainless for my CT. I really like how SS changes its looks slightly depending on the light conditions. For example, this is my car in the described conditions:
Rain/ overcast skies:
Bright Sunlight (no polish):
Inside (with SS polish):
In the various pictures I've seen, the Cybertruck has the same characteristics. The CT in stainless with black trim is a classic look in my opinion.
